A flavorful, healthy soup… The parmigiano reggiano cheese (which is said to reduce belly fat) really adds a great complimentary flavor.
Can be a vegetarian recipe by substituting the beef cubes for vegetable or mushroom cubes.
2 large bowl serving
1 tbsp ghee
1 1/2 cups chopped button mushrooms
1/8 cup chopped white onion
2 cups water
2 Oxo beef cubes (or vegetable cubes)
1 tbsp Worcestershire Sauce
1 tsp Herbes de Provence
1/2 tsp dried thyme
3 tbsp plain yogurt
1 tsp honey
3 tbsp roughly grated parmigiano reggiano cheese
Melt ghee in a medium sized pot over medium low heat and add mushrooms and onions until sauteed. Add chicken stock, Worchester Sauce, Herbes de Provence and thyme and continue cooking over medium low heat about 5 minutes. Remove from heat. Whisk in yogurt and honey. Pour into bowls and top with grated cheese. Serve immediately.
