Pecan Date Chicken Stuffing

Not sure if I should really call this a ‘healthy’ stuffing.  After all, what is ‘healthy’ anyway.  The term ‘healthy’ in of itself, varies significantly from person to person based on their beliefs.  However, I do think its fair to say this version is ‘healthier’ than your standard because it contains whole wheat bread as opposed to white, and ghee as opposed to butter.  Fair enough?  smiley

Great for a 3-4 pound bird.  Could

also be doubled for a turkey!

Hint:  Instead of chopping dates, I find it simpler and cleaner so cut with my kitchen scissors.



3 slices whole wheat bread

1/2 white onion (chopped)

1 stalk celery (chopped)

1/3 cups chopped dates (to the size of raisins)

1/3 cup chopped pecans

1 1/2 tsp marjoram

1 1/2 tsp thyme

1 1/2 tsp sage

1/2 tsp salt

1 tsp pepper

3 tbsp melted ghee

stuffing raw

Mix well.

Stuff into bird and cook the bird according to directions.
