Crispy Sweet Potato Chips with Spicy Chipotle Mayo


Tasty, crispy, healthy!  We all need to eat more sweet potatoes…. they contain powerful antioxidants, are good for our cardiovascular health and are packed with beneficial vitamins and minerals.

Enjoy with a meal or as a snack.

Gluten-free, dairy-free, vegetarian


Recipe:  Crispy Sweet Potato Chips (serves 2 with a meal)

1 large Sweet Potato

3 tbsp Coconut Oil

generous pinch Himalayan Sea Salt


Preheat oven to 375 fahrenheight.

Slice sweet potatoes thinly with a sharp knife.  Melt coconut oil in oven on a large cookie sheet.  Place sweet potatoes on a single layer on the sheet and sprinkle with sea salt.   Roast in oven for about 45 minutes, turning every 10 minutes.  Serve with Spicy Chipotle Mayo.


Recipe:  Spicy Chipotle Mayo

1/2 cup mayo (Homemade is better for you… recipe found here!)

1 tbsp Sriracha Mayonnaise (Available in Asian grocery stores)

1 tsp Chipotle Sauce


Mix well in a small bowl.
