I called this recipe Addictive Baba Ganoush because I literally could not stop eating it. I topped a baked potato with half of it, which I know is just crazy, and then ate the rest of it by the spoonful.
I think it was the addition of the liquid smoke that really made it. I think it also has more garlic than most recipes. I won’t take credit for adding liquid smoke. It was a store brand I noticed it in that gave me the idea. I am not a huge fan of liquid smoke and I wasn’t a huge fan of baba ganoush but the combination but in this recipe, really makes for a rocking appetizer or topping.
I bought the eggplant because I’m on a cleanse and I am simply trying to get all of the healthy, colourful veggies into me over the next 3 weeks. I decided to make this exotic dip with it and I’ll be making it again, and again and again and serving it to guests often.
The main ingredient is, of course, eggplant, which has numerous health benefits. It’s high in antixodants, good for heart health and blood sugar, may have cancer fighters, is high in nutrients and may also help in weight loss! Yay! Details here.
Recipe – Makes about 2 cups
1 medium eggplant
1 clove garlic
1/2 tsp salt
1 heaping tsp tahini
1 tbsp lemon juice
2 tbsp olive oil
3 -4 drops liquid smoke
Turn oven to 375. When oven is ready, place eggplant on a small pan and bake until soft – about 40 minutes. Let cool and scoop out insides. Put all of the ingredients into a medium bowl and with an immersion blender, blend it up til mixed will.
Optional – Drizzle with olive oil before serving.
