You have to try these amazing stuffed mushrooms. I serve them to omni friends who rave about them. The vegan cheese and sausage could fool any omni into thinking these mushrooms are made with animal products, but they are 100 percent cruelty-free and delicious.
I am liking the Daiya cheese lately too. When I first started trying vegan products in 2016, I didn’t like it. I am thinking they have changed the recipe since then. I believe they were a soy based cheese and are now a coconut oil based cheese. The Pepperjack style shreds are delicious, with a bit of spice and melt nicely. They were the perfect ingredient for this recipe.
The vegan sausage used in this recipe were Field Roast Italian, but you could use any flavour and I’m sure the results will be just as spectacular.
You can use white button mushrooms or cremini mushrooms like I did. I normally choose cremini over white simply because cremini mushrooms contain more nutritional benefits. These mushrooms are a quick prep and don’t take long in the oven. Cooking time will depend on your oven, but approximately 15 to 20 minutes. An easy way to know they’re done is to look for some liquid in the pan. When you see liquid, they’re perfectly cooked.

Vegan Sausage and Cheese Stuffed Mushrooms
Preparation time: 5 minutes
Cooking time : 15 to 20 minutes
12 mushrooms (white or cremini)
2 tbsp. vegan cream cheese
1/2 tsp garlic powder
2 tbsp Vegannese mayo
1/4 vegan sausage (finely chopped)
2 tbsp panko
1 tbsp Dayai Pepperjack Shreds plus more for topping
Preheat oven to 400 degrees F
Remove the mushroom stems by pulling them out gently. (Put them back in the fridge to use in other recipes or salads). Place them on an oven baking tray or dish. Combine all other ingredients in a small bowl and with a small spoon, scoop the mixture into the mushroom caps. Take some more cheese and place on the top of the mushrooms. Carefully place them in the preheated oven and cook until done. Remove from oven and let sit for about a minute to cool off, then place on a serving dish.
