This is a simple ‘clean’ recipe that makes you realize why you can love clean eating.
The recipe is under the “Main Dishes”, “Sides” and “Appetizers”. As a main dish, serve with a salad and voila! Serve as a side with a beyond meat burger or vegan sausage. Or make it into an appetizer. Just cut it in half or into quarters and serve on a small plate with a fork and a knife.
We start out with the humble potato, the mushroom and the humble onion.
And ends in a magical creation.
We already know that everyone loves mashed potatoes. Add some some fried onions, a touch of olive oil, salt and pepper and you’ve got a whole new level of mashed potatoes. I used white potatoes because they don’t seem to need as much liquid when mashed. Use a hand blender or immersion blender to get the creamiest mixture. Place it on a Portobello Mushroom and bake it until the potato gets a nice crispy skin and you’ve got a main dish that everyone will love.

This recipe is simple enough for a beginner. Just make sure you boil the potatoes until soft enough that you can easily put a fork in them. As well, make sure the final product is well roasted in the oven, with some brown forming on the peaks of the potatoes, as pictured below.
As far as health factors go, when you look at the nutrition in a potato, you can see why it kept the Irish alive for so long. Rich in B vitamins, with lots of fibre, plus a multitude of essential vitamins and minerals like iron and magnesium. Mushrooms are a great source of copper and selenium and also combat cancer, inflammation and more. Onions help build immunity, aid in digestion, diabetes, anemia, hair growth and anti aging. When buying olive oil, make sure you are buying the real deal. You could be purchased a fraudulently labelled garbage oil. How To Do A Reduction
This recipe calls for balsamic reduction. If you don’t have any on hand, you can use balsamic vinegar to make a balsamic reduction. More notes found here, just scroll down.
4 medium white potatoes
1/4 cup yellow onion
2 tsp plus more olive oil
4 portabello mushrooms
1 tsp Himalayan or sea salt
1/2 tsp pepper
Heat oven to 375 degrees
Peel and cut potatoes into small pieces and place in a medium pot of boiling water. Peel and cut the parsnip and put it in the same pot. Boil until very soft.
In the meantime, cut up the onion and place in a bit of oil in a frying pan. Cook until the onions are translucent.
Drain the potatoes and parsnips as soon as they are done. Place them back in the pot, with the stems of the portabellos, 2 tsp olive oil, and add salt and pepper and puree with a hand blender (or immersion blender).
Divide the mix into 4 equal portions and place on the top of the mushroom caps. Place in the oven for about 1/2 an hour.
Serve immediately but with a warning that filling will be hot!
