Creamy Keto Vegan Vanilla Fudge

Vegan keto can be delicious and can change your life.   I’m dropping weight while enjoying utterly fantastic foods, like this creamy fudge.

If you’re doing vegan keto and you need a sweet fix, give these a try.   I take one out of the freezer daily to thaw so that I can enjoy one treat per day.  If they were too accessible, I am afraid I would eat them all at once.

I poured mine into mini cups.  The recipe would make about 18 mini cups.   One serving, or one mini cup is about 150 calories and about 3 carbs, so this is the perfect sweetness fix when you need one.

The recipe is simple and no fail.  You can warm it all up using a double boiler, blend until smooth and pour into cups or a dish.  Here’s a look at the creamy yumminess all warmed up and blended.   If you’re not familiar with how to use a double boiler, there are some tips on this page on how to use your regular pots that you have.  Just scroll down.vanilla 1

One ingredient that may not be readily available in every grocery store is cocoa butter.   Don’t be afraid to purchase a bag.  I have other great recipes that use this ingredient.  If your grocery store doesn’t carry it, you can always buy it online .

I used Violife Original Alternative to Cream Cheese in this recipe. It’s the best vegan cream cheese ever.  I can’t get enough of the stuff.  Here is a link to their website.  https://violifefoods.com/

I bought mini paper cups for mine, but you could grease a loaf pan and pour your fudge into that to let it firm up too, and then cut.

Creamy Keto Vegan Vanilla Fudge

Makes about 18 mini cups
150 calories or 3 carbs per cup

1/2 cup cashew butter

1/2 cup cocoa butter

1/2 cup Violife Original Creamy Alternative to Cream Cheese

1/2 cup vegan mayo

5 tsp vanilla

6 packets of stevia

pinch of salt

Using a double boiler place the cashew butter,  cocoa butter, Violife into a pot and turn up heat to medium low until it’s all melted.   Add all of the remaining ingredients and use an immersion blender to make it smooth.  Heat it until almost boiling then remove from heat and pour into cups or into a greased loaf pan or anything that is about that same size.   Put it into the fridge immediately.  It will be fully set after about 6 hours in the fridge.
