In efforts to avoid foods with preservatives, chemicals and any other kind of unpronouncibles (is that a word?) I decided to start making my own mayonnaise.
This is revised version of one a recipe I found online.
I made mine right in the bowl and used a hand blender (or as Scott likes to say ‘immersion blender’.
Doesn’t it look yummy? Well, maybe not but it did taste pretty good.
I started reading a bit here and there on various opinions on what kind of oils (or mixes of oils) to use and decided to just use avocado oil, just because I wanted to use that kind because I do believe it to be healthy….until the health experts change their mind.
Next time I might try olive oil or a mix.
I also added xylitol as I noted that on the Hellman’s jar, the ingredient list did contain sugar. I did a taste test when I was done. It didn’t really taste exactly like Hellman’s… but it wasn’t bad either. And I think it has to be healthier.

Real Food (unprocessed)
Recipe
1 whole egg
2 tsp vinegar
1/4 tsp dried mustard
1/2 tsp salt
1 tsp xylitol (or your preferred sweetener)
1 cup avocado
In small mixing bowl, add egg, vinegar, mustard, salt, xylitol and blend. Slowly add all of the avocado oil while you keep blending. Keep refrigerated.

I’ve tried olive oil but didn’t like it although I do like olive oil for other things. Let me know if you try to olive oil and how you liked it 🙂 Recipe looks yummy!

Thanks for the info. Good to know. 🙂 I might try half avocado and half olive oil next time. I’m picky about my oil now that I’ve heard about the olive oil scam. Do you remember what brand you used?

Well, a lot of olive oil being sold in the USA and Canada is not real olive oil.

I was trying to load a video where Dr. Oz talks about it too. It wouldn’t load for me. It’s part of a show called Supermarket Food Fraud. I thought it was good because he also told how to identify real olive oil from fake…. part of it being his ‘fridge test’. However, when I was doing a search, I did come across this article which sstate the ‘fridge test’ doesn’t necessarily work.

i don’t really trust anything dr. oz has to say, personally. but anyway, your recipe is so much different from the one i used! at least, if i remember right, all i used when making mine was egg and oil, with a bit of lemon juice i think. i don’t care much for the taste of olive oil, at least not the EVOO. i always buy the light flavor… so it doesn’t really have a flavor. i’ve heard grapeseed oil works well, but i can’t afford grapeseed. i’ve also heard of blending olive oil and coconut oil together. can’t use straight coconut oil because your mayo would become solid once refrigerated. in any case, since i pack mark sandwiches in his lunchbox i just buy the stuff pumped full of preservatives, so that if it doesn’t stay cold enough (and it usually doesn’t in texas) it won’t spoil.

When I looked on the Hellman’s jar it did add lemon as an ingredient and it didn’t say vinegar either. Next time I will swap it out. Yes, heat is a factor of course. You probably are safer with the preservatives.

yeah. but for flavored aioli sauces, starting with fresh mayo is so much yummier!
